The Perfect Christmas Day Salad! 

Are you searching for the perfect Christmas Day salad recipe? We've got your back with this delicious king prawn with beans and pesto salad!

Ingredients

For the salad:
1 lemon
24 cooked large king prawns, peeled
200g green beans, blanched and trimmed
200g yellow beans, blanched and trimmed
200g roman beans, blanched and trimmed
200g cherry tomatoes, cut in half
Juice ½ lemon
100g roasted skin-on almonds, roughly chopped

For the pesto:
3 tbsp pine nuts
½ garlic clove, peeled
1 bunch basil, leaves picked
½ tsp salt
Pinch of ground black pepper
Juice ½ lemon 
2 tbsp extra virgin olive oil
1 tbsp grated parmesan

Method

To make the pesto:
Place the pine nuts and garlic into a mortar and pestle and pound to a smooth and creamy texture. Add the basil and pound with the pine nuts and garlic until smooth. Add the salt, pepper, lemon juice, extra virgin olive oil and parmesan and mix well. Set aside.

For the salad:
Boil the lemon for 3 minutes in salted water, take out then refresh in ice water. Using a vegetable peeler, peel off the outer skin and discard the inside. Set aside the peeled skin.In a large bowl, combine the prawns, blanched beans, cherry tomatoes, lemon skin, juice of half a lemon and pesto. Arrange on a platter and sprinkle with chopped almonds.
